Ingredients

2 oz bourbon

1 oz grilled peach purée (peach halves grilled cut-side down, then blended smooth)

½ oz lemon juice

Club soda, to top

Ice

Grilled peach wedge, for garnish

Step 1 — Fire the Fruit

Grill peach halves until the edges char and sugars caramelize. Purée until smooth.

Step 2 — Shake the Base

Combine bourbon, grilled peach purée, and lemon juice in a shaker with ice. Shake hard.

Strain into a tall glass over ice. Top with club soda.
